Recipes That Will Keep Your Mouth Happy This Holiday Season

1. Strawberry Santas

1 cup of heavy whipping cream

      1 pint fresh strawberries, hulled

      1 tbsp confectioners sugar

      1 tbsp chocolate sprinkles

1.     Cut the hulled-side of the strawberries so they can stand upright on a plate. Slice off the tip of each strawberry (to be used as the hat) and set aside.

2.     Beat confectioners sugar and cream in a bowl until soft. Lift beater or whisk straight up; the whipping cream will form soft mounds.

3.     Spoon a dollop of whipped cream on top of strawberry base for the face and beard. Set the hat above the face. Using a toothpick, add a dot of whipped cream on top of the hat for the ‘pom-pom,’ and two dots on the strawberry base for the buttons. Place two sprinkles on the face to be used as the eyes.

2. Soft Gingerbread Cookies Dipped in White Chocolate

      2 cups of sugar

1 ½ cups of canola oil

      2 eggs

      ½ cup molasses

      3 teaspoons ground ginger

      4 cups of flour

      4 teaspoons of baking soda

      1 tablespoon of ground ginger

      2 teaspoons of cinnamon

      1 teaspoon of salt

      (2) 11-oz packages of white chocolate chips

      ½ cup shortening

1.     Preheat oven to 350 degrees.

2.     Combine sugar and oil in a mixing bowl and mix well. Add eggs and beat well after each is added in. Stir in molasses.

3.     Combine flour, baking soda, ginger, cinnamon and salt in a separate bowl. Gradually add in the molasses mixture.

4.     Shape dough into 1-inch balls and roll balls in sugar. Place them 2 inches apart on ungreased cookie sheets.

5.     Bake for 10-20 minutes or until cookie springs back when lightly touched. Place cookies on wire racks to cool.

6.     Melt white chocolate chips and shortening together in saucepan over low heat (or microwave), and stir until smooth. Dip each cookie halfway into the mixture, allowing excess to drip off. Place on waxed paper to cool/harden to your liking.

3. Christmas Meatballs

      2 eggs

1 envelope of onion soup mix

      ½ cup seasoned bread crumbs

      ¼ cup chopped dried cranberries

      2 tbsp minced fresh parsley

1 - ½ pounds lean ground beef (or preferred meat)

      1 can (14 oz) whole-berry cranberry sauce

      ¾ cup ketchup

      ½ cup beef broth

      3 tbsp brown sugar

      3 tbsp finely chopped onion

      2 tbsp cider vinegar

1. In a bowl, combine eggs, soup mix, breadcrumbs, cranberries and parsley. Crumble meat over mixture and mix well. Shape into 1-inch balls, then place 12-14 balls on a microwave-safe plate. Cover with waxed paper. Microwave on high for 2-3 minutes, or until no longer pink. Remove to paper towels to drain. Repeat with remaining meatballs.

2. In a 2-quart microwave-safe dish, combine sauce ingredients. Cover and microwave them on high for 3-4 minutes or until heated through, rotating once. Stir in meatballs gently. Cover and cook on high for 1-2 minutes or until heated through. This recipe will make about 3 dozen meatballs.
